A delicious sweet treat jam-packed with antioxidants and healthy fats! Mini muffins are the perfect size to help kick that chocolate crazing.
INGREDIENTS
3 medium aging bananas
1 egg
3T butter, melted
3T sugar
1/2t vanilla
1/2t cinnamon
1/4t nutmeg
1/4t turmeric (optional)
1/8t allspice(optional)
1/4c cocoa powder
1/3c flour
1/3c whole wheat flour
1.5t baking powder
1/2t baking soda
1/4t salt
3T ground flax (optional)
3T hemp seeds (optional)
1/3c goji berries
1/3c walnuts, chopped
INSTRUCTIONS
Preheat oven to 425°F. Mash bananas in a large bowl using a potato masher or fork. Whisk in egg, melted butter, sugar, vanilla, cinnamon, nutmeg, turmeric, and allspice together. Add cocoa powder, flours, baking powder, baking soda, salt and flax. When almost combined, add hemp seeds, goji berries and walnuts. Scoop into 24 mini muffins, put in the oven and reduce the temperature to 375°F. Bake for 15 minutes.
