Life is slowing down a bit and its giving me and my husband some extra time together. It’s been really nice and last night we even made dinner together and it was absolutely delicious.
INGREDIENTS
1/2 onion, chopped
1 broccoli crown, chopped small-stems/branches too
1 carrot, shredded
1c cabbage, fine chop
1 can water chestnuts, drained and chopped
1 package chow mien noodles, cooked to package directions
Sauce:
2T grapeseed oil (or other flavorless high heat oil)
1t toasted sesame oil
2T soy sauce
1/2t fish sauce (optional)
1/2t brown sugar/honey
Green onion/sesame seeds
INSTRUCTIONS
Stir together sauce ingredients and have everything chopped and ready to go before you start the burner.
Saute onion and broccoli stems with a little oil in a large skillet or wok on med-high for about 45 seconds, stirring constantly. Add carrots and broccoli florets, stir for another 45 seconds. Add cabbage and water chestnuts, stir, use some more oil if necessary. Pour in sauce then noodles and toss to coat. Top with sliced green onion and sesame seeds if you’d like.
ENJOY!
