INGREDIENTS – serves 2-4
6-8c fresh greens
2 peaches, sliced
1/2c fresh mozzarella pearls
1/4c pecans, toasted
1-2t fresh thyme
2T red wine vinegar
1T maple syrup
2T olive oil
INSTRUCTIONS
Assemble the salad on a large plate or bowl. Fresh greens first, top with peaches, mozzarella and pecans.
In a small mason jar, combine thyme, vinegar, maple and olive oil with a pinch of salt and pepper. Secure the lid tight then shake to combine. Drizzle over the salad.
