SPICY PEANUT BUTTER GROUND CHICKEN + CUCUMBERS

You’re gonna love this quick and easy dinner! Crispy cool cucumber and ground chicken finished in a peanut butter, soy, sriracha sauce. So flavorful and delicious!

INGREDIENTS – serves 2

2T oil
1/2lb ground chicken

2T peanut butter
2T soy sauce
1T maple syrup
1T rice wine vinegar
1-2t sriracha, based on your spice tolerance
1/4t garlic powder
1/4t white pepper

3 Persian cucumbers, chopped (or half a larger cucumber)

2T sesame seeds, to taste
1-2 green onions, chopped

INSTRUCTIONS

Bring a large skillet to medium – med-high heat. Cook chicken in oil , breaking it up with a wooden spoon.

While it cooks, get the sauce together and chop your cucumbers. In a small bowl or measuring cup, stir together peanut butter, soy sauce, maple syrup, vinegar, sriracha, garlic powder and white pepper.

When the chicken is almost cooked through, reduce the heat to medium, dump in the cucumbers then sauce and stir to coat. After about a minute, stir in sesame seeds and half the green onion.

Serve over rice and finish with more sesame seeds and the rest of the green onion.
