THAI CURRY BEEF RAMEN

My most flavorful, delicious crockpot dinner yet! Beef smothered in Thai curry paste then slow cooked all day long in a garlicky, coconut broth with some veg added in at the end then finally spooned over ramen noodles and finished with a little lime and chopped cashews. Freaking amazing!

INGREDIENTS – serves 2-3

1 lb beef roast
3T Thai red curry paste (please don’t use Thai Kitchen it has no flavor)
1-16oz can coconut milk
3c beef broth
2T soy sauce
4 garlic cloves

2 medium carrots, roughly 1″ chop
1 red bell pepper, 1″ chop

1 1/2c green beans, frozen

Ramen noodles, 2-3 packs

INSTRUCTIONS

Slather beef in curry paste completely then place in a crockpot. Dump any leftover curry paste in the pot. Pour coconut milk, beef broth, soy sauce and garlic cloves around the beef. Cover with the lid and cook on high for 8 hours.

Add carrots and bell pepper. Cook for another hour then add green beans and cook for 1 more hour.

Place a noodle block in a bowl. Break up the beef a little then ladle over the ramen to cover. Top with a lid (or upside-down plate) and let sit for about 5 minutes, until the noodles are cooked.

  1. Through it in the crockpot at breakfast and didn’t have to do a thing till it was time to throw in the vegetables. Easy! And a plate on top while the ramen soaked up the juice, great idea! Delicious!
