GRILLED PEACH + CORN BRUSCHETTA with BURRATA

I cannot get enough of these! Bits of caramelized, juicy peaches, charred pops of sweet corn and fresh green onions tossed in a lemon, hot honey dressing then served with a tear of burrata over a crisp baguette slice. A perfect little bite of summer.

INGREDIENTS – makes about 15-20

1 ear of corn, husks removed
1 peach, cut off the pit
1 baguette, 1/4-1/2″ slice

2 green onions, sliced thin

1/2 lemon, juiced
1t hot honey, or plain
1T white balsamic vinegar
2T olive oil

2 small or 1 large burrata ball

INSTRUCTIONS

Bring your grill up to medium heat. Grill the corn on all sides until charred.

When the corn is about halfway done, brush the peach and baguette slices with a little olive oil then grill on both sides until the peach has some grill marks and gets a little bubbly and the bread slices are just toasted.

Allow to cool then cut the corn off the cob and the peaches into small cubes then add them to a medium bowl with the green onion.

Add lemon juice, hot honey, vinegar and olive oil to a mason jar or small bowl with a pinch of salt and pepper. Whisk or secure with the lid and shake until combined. Pour over the corn and peaches and toss to coat.

Place the baguette slices on your serving dish. Tear a little burrata off and place on each slice then top with the corn and peach salad.
