GRILLED LEMON GARLIC CHICKEN with CHOPPED CUCUMBER SALAD

A super fresh and flavorful dinner that you are going to absolutely love! Greek-style marinated chicken breast grilled to perfection then sliced up alongside a simple lemon, dill chopped cucumber salad. An ideal summer meal.

INGREDIENTS – serves 2

I chicken breast, boneless/skinless

1 lemon, juiced (plus more for the salad)
2 garlic cloves, grated
1/4t salt
1/4t black pepper
1/2t oregano
Pinch red pepper flakes
1T olive oil

2 Persian cucumbers, halved/quartered then sliced
2-3T red onion, finely chopped
2t fresh dill, chopped
1/2 lemon, juiced
2T olive oil

INSTRUCTIONS

Place chicken breast in a container with a lid. Whisk together lemon juice, garlic, salt, black pepper, oregano, red pepper flakes and olive oil. Pour over chicken, lifting it up a little to make sure theres some marinade underneath. Cover with the lid and refrigerate for 1-3 hours.

Add the cucumber, red onion and dill to a medium-large bowl. Sprinkle with a big pinch of salt and pepper then squeeze the remaining 1/2 lemon over and drizzle with the last 2T of olive oil. Give it a good stir and store in the fridge until serving.

Bring your grill up to heat then reduce to a medium temp. Grill the chicken for 6-8 minutes on each side, until cooked through. Let rest for 5-10 minutes before cutting it up and serving with the cucumber salad.
