One bite and you are instantly on a tropical vacation! Toasty sweet drops of coconut dipped in rich dark chocolate. Completely addictive and so easy to make.
INGREDIENTS
4 egg whites
1c sugar
2t vanilla extract
3c shredded coconut, unsweetened
Pinch salt
3/4c dark chocolate chips (or semi sweet)
1T coconut oil
INSTRUCTIONS
Preheat oven to 350°F.
In a large stainless or glass bowl, stir together all ingredients, except chocolate chips and coconut oil.
Place the bowl over a boiling pot of water, creating a double-boiler. Cook the mixture for 6-8 minutes, stirring occasionally. You’re looking for the sugar to melt into the egg whites and the mixture to get stickier.
Scoop into 2T balls, place on a parchment lined baking sheet about 2″ apart then bake for 13-15 minutes. Allow to cool completely.
Melt chocolate and coconut oil together in the microwave or another double-boiler. Give ti a good stir then dip each macaroon halfway in then put it back on the parchment to cool completely. (Put them in the fridge to speed up this process).
Store in the fridge.
