Chicken thighs marinated in a sweet ginger, garlic soy sauce. Grilled up until tender with a touch of char then chopped up and wrapped in a fresh lettuce leaf with a spicy peanut butter sauce. Such a delicious appetizer or light dinner. You’re gonna love it!
INGREDIENTS – serves 2-4
4-6 chicken thighs, boneless/skinless
1/3c soy sauce, plus more for the sauce
1/4c honey, plus more for the sauce
1t ginger powder, plus more for the sauce
1t garlic powder
1t mustard powder
1T sesame oil
1/4c peanut butter
1T honey
1/4t red pepper flakes
1T soy sauce
1/4t ginger powder
1/2 lime, juiced
2T water
Shredded cabbage
Butter leaf lettuce
INSTRUCTIONS
Get your grill hot then reduce the temp to medium. Grill the chicken thighs for 8-10 minutes on each side until cooked through. Set aside and let rest for a few minutes until cutting it up in thin strips.
While the chicken is resting, stir together peanut butter, honey, soy sauce, red pepper flakes, ginger, lime juice and water.
Serve with some shredded cabbage for some extra crunch and lots of fresh big leafy lettuce.
