CROCKPOT MODELO PORK TACOS

Theres something just right about a crisp Modelo with lime in the summertime and these pork tacos know what its all about! Tender, juicy pork with lots of flavorful spices simmered with a can of Modelo and a squeeze of fresh lime. Incredibly easy and so freaking delicious.

INGREDIENTS – serves 2-3

1.5-2 lb pork roast, 1″ cubed (I used sirloin but anything will work)
1/2t salt
1/2t black pepper
1t cumin
1t garlic powder
1/2t onion powder
1/2t chili powder
1/4t red pepper flakes
1 modelo (or any light Mexican beer)
1 lime, juiced

Tortillas
Shredded cabbage
Queso

INSTRUCTIONS

Place pork in a crockpot, sprinkle with seasonings and stir to coat. Pour in modelo and lime juice, top with the lid and cook for about 6-8 hrs on high.

Scoop pork out with a slotted spoon and lightly shred with a fork. Spoon over some of the juice leftover in the pot and serve.
