Strawberries and peaches blended with greek yogurt and a little honey, stirred with chia seed for a delicious high protein treat as is or top it with a little homemade chocolate shell to make it a little more fun and get that chocolate fix. These are so delicious and easy to make. I love just having some stashed in the fridge so I can grab one whenever I want.
INGREDIENTS – makes 3
2-3 strawberries
1 small peach, quartered
1/3c milk
1/2c greek yogurt
1T honey
1/4t vanilla
Pinch salt
1/4c chia seeds
1/3c chocolate chips
1/2t coconut oil
INSTRUCTIONS
Put strawberries, peach, milk, yogurt, honey, vanilla and salt to a blender, whip until smooth. Add the chia seeds and pulse 1-2 times until they are stirred in but not broken up by the blender. Pour the mixture into three 1c containers, cover with a lid, and refrigerate for at least 4 hours-overnight. You can just enjoy the chia puddings as is or add the chocolate shell with the instructions below.
Melt chocolate chips and coconut oil in the microwave or a double boiler then distribute over the pudding. Gently spread the chocolate out, making sure it touches the dish all the way around. (This helps when you go to break it with a spoon, if it doesn’t stick to the sides it will just squish the pudding out around the sides… messy experience.) Place the lids back on and put them back in the fridge until the chocolate has hardened, at least an hour.
