CHOCOLATE PEANUT BUTTER BANANA PRETZEL BITES

A little peanut butter and a slice of banana sandwiched between two pretzels then covered in chocolate. A creamy, crunchy, salty, chocolatey little frozen treat. So delicious and perfect for hot summer days!

INGREDIENTS – makes 10

20 bite size pretzels
10t peanut butter (sub any nut/seed butter)
1 banana, 1/4″ slices
1c chocolate chips
2t coconut oil

INSTRUCTIONS

Line a small baking sheet (one that fits in your freezer) with parchment then distribute 10 of the pretzels over the parchment. Plop about 1/2t of peanut butter on each pretzel, squish it down a bit by placing a banana slice on top then add another 1/2t peanut butter. Gently press the remaining pretzels on the tops then freeze for 1+ hours.

Using a microwave or double boiler, melt the chocolate chips with coconut oil, stirring occasionally until smooth. Take the pretzel sandwiches out of the freezer and quickly dunk each in the chocolate until coated, remove with a fork, draining off excess chocolate before placing them back on the parchment and returning them to the freezer for 1-2 hours until solid. Store in the freezer in a ziptop bag.
