Tender zucchini sautéed in lemon, garlic and thyme then toss with gnocchi and finished off with some creamy burrata. Delicious is an understatement. So good!
INGREDIENTS
1 pkg gnocchi (about 3c)
3-4T butter
1 large zucchini or any other summer squash, cubed
1 lemon, zested and juiced
3 garlic cloves, grated
1/4t salt
1/4t black pepper
1/8-1/4t red pepper flakes
2-3 fresh thyme sprigs, stems removed (or 1/4t dried thyme)
2 mini burrata balls or 1 large
INSTRUCTIONS
Bring a med-large pot of salted water to boil. Cook gnocchi to package instructions, strain and set aside.
Melt your butter in a large skillet on medium-med-high heat. Add the zucchini, lemon zest, garlic, salt, black pepper, red pepper flakes and thyme. Cook for 4-5 minutes, stirring occasionally. Pour in the gnocchi and lemon juice and toss to coat. Serve it up then tear burrata over the top.
