RASPBERRY ALMOND OAT BARS

Chewy and gooey on the bottom, sweet and tart raspberry jam in the middle and a crisp and crunchy crumble on top. These super easy to make bars are seriously to die for. You have to make them!

INGREDIENTS 9-16

1/2c butter, melted
3/4c brown sugar
1 egg
1t vanilla
1c flour
3/4t baking powder
1/8t salt
1/2c raspberry jam (any flavor work too)
1/2c oats
1/3c sliced almonds

INSTRUCTIONS

Preheat oven to 350°F. Using a whisk, stir together butter and brown sugar in a large bowl, add the egg and vanilla, stir to combine. Pour in flour, baking powder and salt and stir it in. Dump about 2/3 of the batter in a well greased, parchment-lined 8×8/9×9 baking dish. Evenly spread it out then pour the jam over and spread that out too (I like to microwave the jam for about 15-30 seconds so its easier to work with). Add the oats and almonds to the remaining batter and fold them in. Grab clumps of the batter and sprinkle it over the top, making sure to leave pockets of jam showing through. Bake for 35-40 minutes, allow to cool before removing it from the pan and slicing it up.
