SPICED BAKED MEATBALLS with WHIPPED RICOTTA

Kicking up the flavor with lots of cozy spices and balancing it all out with a little whipped ricotta. These easy baked meatballs are so satisfying and delicious. Perfect for any day of the week!

INGREDIENTS – serves 2-3

1/2lb ground chicken/turkey (you could use any ground meat)
1 egg
1/4t salt
1/4t garlic powder
1/4t onion powder
1/4t smoked paprika
1/8t cumin
1/8t coriander
1/2c bread crumbs

1 15 oz can tomato sauce
1/4t cinnamon
1/4t turmeric
1/8t salt
1/4t black pepper
Pinch red pepper flakes
1/4c water

8oz ricotta, whipped in a food processor until smooth

INSTRUCTIONS

Preheat oven to 375°F.

Lightly mix ground meat, egg, salt, garlic powder, onion powder, smoked paprika, cumin, coriander and bread crumbs. Drizzle a little olive oil (or nonstick spray) on the bottom of an 8×8 or 9×9 dish. Scoop the meat mixture into about 16-20 balls (I use a small cookie scoop). Place the meatballs in the dish then bake for 15 minutes. In a medium bowl, stir together tomato sauce, cinnamon, turmeric, salt, black pepper, red pepper flakes and water, pour over the meatballs and bake for another 15 minutes. Stir before serving to make sure all the meatballs are coated and saucy.

Serve with a swoosh of whipped ricotta and your favorite pasta.
