CHOCOLATE SHORTBREAD

An all time niece and nephew favorite in our family. These chocolate shortbread cookies are delicate, super chocolatey and so freaking delicious. Can’t make enough of these!

INGREDIENTS

1c butter, room temp
1 1/2c flour
1/2c cocoa powder, plus more for rolling
1c powdered sugar
1/4t salt
1/2t vanilla

Sprinkles – optional

INSTRUCTIONS

Preheat oven to 300°F. Place the butter in the bottom of a large bowl or stand mixer. Sift flour, cocoa powder, powdered sugar and salt over the butter, pour in the vanilla then mix together until smooth. A stand mixer or hand mixer makes this a lot easier but you can do it with just a wooden spoon and elbow grease.

Sprinkle some cocoa powder on the counter then mush the dough into a disk. Roll it out (using more cocoa) to about 1/4″ and cut into desired shapes. Transfer each cookie to a parchment-lined baking sheet about 2″ apart, add some sprinkles if you’d like then bake for about 8 minutes. Repeat until all the dough is used up. Allow to cool a bit before taking them off the baking sheet and cool to room temp before serving.
