Crispy pieces of bacon, sautéed cabbage with a little soy sauce and a touch of maple syrup with perfectly cooked eggs nestled in then finished off with some everything bagel seasoning. This breakfast is so incredibly fast, delicious and a great way to mix it up!
INGREDIENTS – serves 2
4 slices bacon
3-4c green cabbage, shredded, about 1/2 a head
1T soy sauce
1t maple syrup
1/8-1/4t red pepper flakes (to taste)
3-4 eggs
1/4c water
Everything bagel seasoning
INSTRUCTIONS
Bring a large skillet to medium to med-high heat. Fry bacon to your liking, remove to a paper towel lined plate then chop it up and set aside. Drain excess fat then dump the cabbage in the skillet. Sauté for 2-3 minutes until it starts to soften and brown just a little. Reduce the heat to medium then add soy sauce, maple syrup and red pepper flakes, stir to combine then cook for another minute. Make 3-4 (however many eggs you are using) small crevices in the cabbage then gently crack an egg in each then pour the water around the pan, missing the eggs. Cover for 2-4 minutes until the eggs are cooked the way you like. Finish with everything bagel seasoning.
