This is about to be your new favorite appetizer! Perfectly crisp herb, parmesan, breadcrumb coated gnocchi. Crunchy little clouds of goodness. Dip em in your favorite marinara or pesto and they will disappear!
1 pkg gnocchi (about 3c)
1/4c parmesan, grated
1/4t dried basil
1/4t dried oregano
Marinara for dipping – optional
Preheat oven to 425°F. Set up 3 bowls, 1 with flour, 1 with eggs and milk and the last with breadcrumbs, thyme, basil and oregano. Whisk the eggs and milk until smooth and stir the herbs and cheese into the breadcrumbs. Toss the gnocchi in the flour then working in batches, coat them with the egg mixture then the breadcrumb mixture. Place on a lined baking sheet and continue until all of the gnocchi are coated in breadcrumbs. Bake for 15-18 minutes until golden brown.
