A classic cozy chicken soup with fluffy gnocchi floating throughout. Delicious, easy to make and guaranteed to warm you up on a cold day!

INGREDIENTS – serves 3-4

2T olive oil
1/2 onion, diced
2 celery stalks, diced
1 carrot, diced
1 garlic clove, minced
1/4 t thyme
Pinch red pepper flakes
Dash nutmeg
6c broth
1 chicken breast
1/2-16oz pkg gnocchi or 1 1/2c homemade (recipe here)

Black pepper


Bring a large pot to med-high heat. Add the onion, celery and carrot with a pinch of salt, cook for 3-4 minutes until softened. Add garlic, thyme, red pepper flakes and nutmeg, stir until fragrant then pour in broth. Stir everything together, place the chicken breast in the pot and bring to a simmer. Cover and allow to cook for 15-20 minutes, until the chicken is done.

Remove the chicken and shred or chop it up then return to the pot. Bring to a boil and add the gnocchi. Cook until the gnocchi starts to float up to the top, about 2 minutes. Salt to taste and serve with fresh black pepper.
