WINE ROASTED MUSHROOMS with CRISPY PROSCIUTTO + BURRATA

Mushrooms, shallots, garlic and thyme roasted down in white wine while a little prosciutto crisps up here and there. Then if it couldn’t get better, a little burrata is torn over the top while its still hot, melting just enough. So freakin delicious. You have to give it a try!

INGREDIENTS – serves 2-4

14-16 crimini mushrooms, chopped
1 shallot, sliced
2 garlic cloves, smashed
1/4t thyme
1/4t salt
1/4t red pepper flakes (to taste)
1/2c white wine

3 prosciutto slices, torn a little
2 mini burrata balls or 1 large

1/2 sourdough loaf or 1 baguette, 1/2″ sliced and toasted

INSTRUCTIONS

Preheat oven to 425°F. In a 8×8 baking dish, add mushrooms, shallot, garlic, thyme, salt, red pepper flakes and wine. Give it a stir then bake for 20 minutes. Distribute the prosciutto pieces randomly over the top and bake for another 20 minutes. While its still hot, tear the burrata over the top and serve immediately with toast.
