Tender seared pork chops and broccolini in a lemon caper pan sauce. Delicious and elevated but super easy to make!
INGREDIENTS – serves 2
2 – 1″ pork chops
Salt + Pepper
2-3T olive oil
1 bundle of broccolini, cut into thinner pieces
2 lemons, juiced
1/2c broth or water
1T butter, softened
Salt and pepper pork chops on both sides then sear in olive oil on med-high heat on both sides. Set aside and add the broccolini with a small pinch of salt. Toss for about 30 seconds then pour in lemon juice and broth. Stir to scrape any brown bits off the bottom of the pan then add capers, reduce to medium, nestle the pork chops back in the pan then cover with a lid and let simmer for 5 minutes.
Serve with angel hair pasta (or whatever you’d like) and spoon sauce over the top.
