LEMON BASIL COOKIES

Crisp, simple cookies with hints of lemon zest and fresh basil then finished with a touch of sea salt. Sweet, flavorful and addicting. You’re going to love em!

INGREDIENTS – makes about 30 cookies

1c butter, softened
3/4c brown sugar
1/4c fresh basil, chopped
1 lemon, zested
1t vanilla
2c flour
1/2t baking soda
1t cream of tartar
1/8t salt

INSTRUCTIONS

Preheat oven to 350°F.

Using a mixer, cream together butter, brown sugar, basil and lemon zest until light and fluffy, about 10 minutes. Stir in vanilla. Sift in flour, baking soda, cream of tartar and salt. Stir until it just comes together. Scoop or spoon on to a parchment lined sheet pan 2-3″ apart, sprinkle with a little sea salt, squish with the back of a fork then bake for 12-15 minutes.

    • You could try swapping both the cream of tartar and baking soda for baking powder. I haven’t tried it but it should work. They might look a little different but they should taste great. Let me know how it goes.

  1. These cookies are really good! They’re like shortbread but lemon. I used a 1 inch scoop and it made 42 cookies. Good stuff!
