Simple, slightly sweet muffins filled with delicate strips of basil, chunks of fresh strawberries and a touch of lemon zest. A perfect little summertime treat.


1 3/4c flour
2 1/2t baking powder
1/4t salt
1c milk of choice
2 eggs
1/3c sugar
1t vanilla extract
1/4c butter, melted
1c strawberries, chopped
1/4c fresh basil, sliced thin and chopped
1 lemon, zested


Preheat oven to 425°F. In a large bowl, mix flour, baking powder and salt. In a separate bowl, pour in milk, eggs, sugar and vanilla, stir to combine then pour into the flour mixture. Add the butter and mostly stir it in then add the strawberries, basil and lemon zest. Fold until evenly dispersed. Spoon/scoop out 12 muffins in a well greased muffin tin. Place in the oven, reduce the temp to 375°F and bake for 25 minutes.
