Fluffy, crisp, buttery clouds of sweet cinnamony goodness. All mixed up in the blender so they take seconds to make, these addictive treats are seriously the best!
INGREDIENTS – makes 18
2T+1t sugar, separated
4T butter, 1T melted/3T cold/room temp
1/4t cardamom, optional
Preheat oven to 425°F. Pour milk, egg, 1t sugar and salt in a blender, pulse to combine. Sift in the flour and blend until smooth, scrape down the sides if you have to. Pour in the butter and pulse until its completely mixed in. Set aside.
Cut the remaining 3T of butter into 18 chunks and distribute them in 18 cups of a mini muffin pan. Place in the oven for 8 minutes. Pour the batter into the muffin cups until about half full then bake for 15 minutes.
While they bake, stir together 2T of sugar, cinnamon and cardamom, set aside.
Dump the mini popovers in a big bowl, letting all the leftover butter drip into the bowl too. Sprinkle the cinnamon sugar mixture over the popovers and toss to coat.
