Double chocolatey goodness! A rich cocoa batter with mini chocolate chips and shredded zucchini folded in to help keep it super moist and delicious. These muffins are such a treat!
INGREDIENTS – makes 12
1 1/2c all purpose flour
1/2c cocoa powder
2 1/2t baking powder
1 1/2c zucchini, shredded
1/4c butter, melted
1/2c+ mini chocolate chips
Preheat oven to 425°F. In a large bowl, sift together flour, cocoa, baking powder and salt. Next, add milk, eggs, zucchini, sugar and butter. Stir to combine then fold in the chocolate chips. Scoop into a greased muffin pan, place in the oven, reduce the temperature to 375°F and bake for 25 minutes, until a toothpick comes out clean.
