Its that time of year when wrapping up my day with a hot bowl of comforting soup is all I want. This lemony sausage and orzo soup is light and satisfying and cooks up in less than 30 minutes.
INGREDIENTS – serves 4
1-2T olive oil
1/2lb sausage (whatever is your fav)
1/2 onion, chopped
2-3 celery stalks, chopped
1 carrot, chopped
2-3 garlic cloves, smashed + chopped
1/4 t thyme
6c broth or water
3/4c orzo, dry
1 lemon, juiced
1/4t oregano
1/4-1/2t salt, to taste
INSTRUCTIONS
Bring a large pot to med-high heat. Begin to brown sausage in a little olive oil for 3-4 minutes, until about halfway cooked. Add the onion, celery and carrot cook for 3-4 minutes until softened. Add garlic and thyme, stir until fragrant then pour broth. Stir everything together, bring to a boil, then add the orzo and cook to package instructions. Turn off the heat, squeeze in the lemon and sprinkle in oregano and salt, stir and serve.

My sister-in-law told us how good this soup is so I gave it a try. My husband (What’s orzo?) and I had second helpings! Delicious!
