TURKEY TACOS

This weekend there is a container of leftover turkey in just about everyone’s fridge and at this point most of us are getting tired of turkey sandwiches. So let’s transform that holiday turkey into these saucy, spicy turkey tacos! Trust me they require minimal effort and will definitely be a HIT!

INGREDIENTS – serves 2

2-3T olive oil
1/2 onion, chopped
1-2 garlic cloves, minced
1T cumin
1-15oz can tomato sauce
1/4c water
Pinch of red pepper flake
3c turkey, chopped/shredded
1/2 lime, juiced

8-10 corn tortillas, warmed
Cabbage, shredded
Queso fresco/cotija

INSTRUCTIONS

Saute onion in olive oil for about 2 minutes then add garlic and cumin. Stir until fragrant. Pour in tomato sauce with a pinch of salt and red pepper flakes, stir to incorporate then add the turkey and stir until its coated in the sauce. Allow to simmer for 10-15 minutes until the sauce has thickened but is still a little saucy. Turn off the heat, squeeze half of a lime over the mixture and stir it in.

Scoop into tortillas and top with a little cabbage and cheese.
