INGREDIENTS
1 bundle whole green onions
Olive oil
1/2c greek yogurt
3-4 oz feta
1/2 lemon, zested
Salt + pepper

Steamed fresh artichokes
Pita/bagette
Cucumbers, celery, carrots
INSTRUCTIONS
Toss green onions in a drizzle of olive oil then grill, broil or sear in a skillet for 2-3 minutes until charred. Use tongs to move them around and get all sides. Chop the ends off and discard then cut the rest into 1-2″ pieces, set aside.
Put yogurt, feta, lemon zest, a little salt + pepper in a food processor and blend until smooth. Add green onions then pulse until desired texture.
