SHEETPAN GNOCCHI W/ SAUSAGE + ARTICHOKES

This is seriously one of the easiest dinners I’ve ever made and it only takes 4 ingredients, just toss on a sheet pan, set a timer and dinner is done! Juicy artichoke hearts with the perfect amount of crisp on the edges, crunchy-soft gnocchi (which let’s be honest are grown-up tater tots), roasted lemon slices + your favorite sausages. It could not get any better or easier! You’re gonna love it.

INGREDIENTS – serves 2

1 16oz package shelf stable or frozen gnocchi
1 14.5oz jar marinated artichokes, drained
1 lemon, 1/4″ slices
2T olive oil
Pinch salt, pepper, red pepper flakes + thyme

2 sausages, pre-cooked or raw (I like to use chicken)

INSTRUCTIONS

Preheat oven to 425°F. Line a sheetpan with parchment. Dump gnocchi, artichokes + lemon slices on the sheet pan, drizzle with olive oil then sprinkle with salt, pepper, red pepper flakes + thyme, toss then spread everything out. If using raw sausages, add them to the sheetpan and bake for 10 minutes. Give everything a flip then add pre-cooked sausages (if using) and return to the oven for 8-10 minutes.
