LEMON SUMAC ASPARAGUS

Crisp asparagus roasted with lemon zest + sumac is the perfect bright, spring bite! Drag those vibrant stalks through some lemony yogurt and its absolutely to die for! This super easy appetizer or side dish comes together in about 10 minutes and it will take you half that time to finish it off. Just so good!

INGREDIENTS

1 bundle asparagus, ends trimmed
1T olive oil
1/8t salt
Pinch of pepper
1/4t sumac
1/2 lemon, zested + juiced

Optional:
1/3c greek yogurt (any kind of yogurt will do)
1/2 lemon, juiced

Fresh dill

INSTRUCTIONS

Preheat oven to 375°F. Toss asparagus in olive oil, salt, pepper, sumac + lemon zest then spread them out on a baking sheet. Roast for 8 minutes for medium stalks, 6 minutes for thinner, 10 for thicker. Sprinkle with some extra sumac, fresh dill + a squeeze of lemon juice on top.

Stir the juice from 1/2 of a lemon into yogurt then spread on a plate or put in a small bowl for dipping.
