I don’t know about you but at least 1x a month I have die hard cravings for buffalo chicken and these lettuce wraps save me from the deep fryer every single time! Spicy, creamy + loaded with healthy lean protein + tons of fiber! Game day has a clean new look + you are gonna love it! Vegetarian? Swap the chicken for more beans. Don’t eat beans? Swap em for more chicken.
1/3c greek yogurt
1/4t garlic powder
1/8t onion powder
1T white wine vinegar
1/4c blue cheese or gorgonzola
1/4 onion, chopped
1/2lb ground chicken or turkey (sub beans)
3/4c or1/2 can white beans (sub chicken)
1/4-1/2c buffalo sauce (depending on your spice tolerance)
1 head of bib lettuce, leaves removed and cleaned
1 celery stalk, sliced/chopped
Whisk together yogurt, garlic powder, onion powder, vinegar, water and blue cheese. Set aside.
Saute onion in a little olive oil on med-high for 2-3 minutes, until soft. Dump in the chicken, sprinkle a small pinch of salt then stir and let it cook about half way through before you add the beans. Bring together for another minute, until the chicken is cooked through, then pour in the buffalo sauce. Continue to stir to coat, letting the sauce thicken up just a little.
Fill your lettuce leaves then drizzle with some blue cheese-yogurt sauce and top with some crunchy celery slices.
