WINTER SPICED RIBS

Sagey, spicy, sweet + a little bit tangy, these ribs are tender + delicious on the inside with a crispy, caramelized crust on the outside. Super uncomplicated + absolutely to die for!

INGREDIENTS – serves 2

1/2 rack of pork ribs (silverskin removed, baby backs preferred)

1 1/2t salt
1 1/2t garlic powder
1T sage, ground
1/2t cumin, ground
1/4t smoked paprika or regular
1/4t pepper
1/4t thyme
1/4t red pepper flake
2t brown sugar

1/2c apple cider vinegar
2T maple syrup
1c water

INSTRUCTIONS

Preheat oven to 325°F. Pat ribs dry with a paper towel. In a small bowl, mix together salt, garlic powder, sage, cumin, paprika, pepper, thyme, red pepper flakes and brown sugar. Dump about 1/3 of the seasoning on the bone side and rub it in, then dump the rest on the other side pressing and rubbing it in really well, get the sides with the seasoning that falls off. Stir vinegar, maple and water together in the bottom of a 9×13″ dish, then place the ribs in the middle of the pan, bone side down. Cover tightly with foil and bake for 1 hr and 30 min for ribs with a little integrity or 2 hrs for completely fall aparty ribs. Remove the foil and bake for 30 minutes to crisp them up a bit.

  1. I made a full rack thinking I’d freeze half. I doubled the rub but stuck to the same amount of cider, syrup, and water. We went for the 2 hours, “completely fall aparty” ribs and they were! My husband and I ate the whole thing!
