Growing up my mom was the QUEEN of crinkle cookies! She had to have made at least 10 batches every December and her’s were always the BEST around. Recently, we had a Facetime date where we watched ”While You Were Sleeping” (our favorite Christmas movie) and made cookies, I made her crinkles recipe and it was so nostalgic and heartwarming. A great way to spend time with family over the holidays whether you’re social distancing or they live on the other side of the country like us.
1/2c butter, room temp
1 3/4c sugar
3 eggs, room temp
4 oz unsweetened baking chocolate, melted (not hot)
2t baking powder
1c powdered sugar
Beat butter and sugar together until combined. Add vanilla and eggs, beat until smooth and creamy yellow, then pour in the chocolate and stir to combine. (If the chocolate is too hot it will cook the eggs and get lumpy. Be careful that its not too hot.) Sift flour, baking powder and salt together then slowly incorporate until uniform. Refrigerate overnight.
Preheat oven to 350°F. Pour powdered sugar in a cereal bowl. Scoop a heaping tablespoon of dough, roll it into a ball between your hands then LIBERALLY roll in powdered sugar. The more powdered sugar, the prettier they look, if you skimp you’ll be able to see through it after they bake. Distribute a few inches away from each other on a foil or parchment lined sheet pan and bake for 12 minutes.
