Warm-spiced carrots and halloumi roasted to golden perfection. That’s right! Delicious halloumi that you don’t have to fry in a ton of oil! Just toss together with the carrots and spices and throw it in the oven. Such an easy sheet pan meal. You’re gonna love it!
INGREDIENTS
1 bunch of carrots, cut about 1/2″ thick
1 package halloumi, cut into 1/2″ sticks
1/4t coriander
1/4t garlic powder
1/4t cumin
1/8t allspice
1/8t cardamom
1/4t crushed red pepper flakes (or 1/8t cayenne)
1/8t salt
1T olive oil
Pomegranate seeds
Arugula
INSTRUCTIONS
Preheat oven to 400°F, throw the baking sheet you’re going to use in there too. Toss carrots and halloumi in coriander, garlic powder, cumin, allspice, cardamom, crushed red pepper flakes, salt and olive oil, be a little gentle so you dont break up the halloumi. Line baking sheet with parchment and arrange carrots and halloumi so the pieces don’t touch. Roast for 10 minutes, flip then roast for another 8-10 minutes or until the halloumi is crispy.
I like to serve this with rice and lentils, arugula and some pomegranate seeds on top but do whatever feels right.

Sooo good! The red pepper flakes give the dish a nice little bite. Even my “meat in every meal” husband loved this dish!
