I’ve got a super flavorful, super easy crockpot dump dinner for you! Fall of the bone chicken with a mouth-watering, slightly spicy, green chili sauce that you’ll want to pour all over the rice and beans on the side too! Seriously. To. Die. For.


4 tomatillos
1 can green chilis
1/2 onion, rough chop
2 large garlic cloves, slightly smashed
2-4 chicken legs, skin removed
1 lime
1c broth or water
Green chili hot sauce – optional/to your preference
2T olive oil


Place tomatillos, green chilis (the whole can), onion and garlic in the bottom of your crock pot. Sprinkle chicken legs with salt and cumin then nestle them on top of the veg. Stir together lime juice, broth and hot sauce then pour into the pot (try not to rinse all the seasoning off the chicken). Drizzle olive oil over the chicken then cook on high for 5-6 hours or low for 8 hours. Remove chicken, making sure to get it all. Using an immersion blender, puree the veg into a sauce or mash it with a potato masher/fork. Return the chicken to the pot and let it sit in the sauce for 1-2 minutes.

I like to serve this with pinto or black beans and rice (extra sauce please!) and a huge pile of shredded cabbage/carrots with a squeeze of lime. DELICIOUS!
