A 15 minute meal that is so much fun to eat as a family! Lightly seasoned chicken, peppers and red onions with a hint of heat and squeeze of lime wrapped up in a tortilla or in a bowl with some rice and beans. Delicious and so fast, this is a PERFECT weeknight, one pan meal.
INGREDIENTS – serves 2-3
1 small red onion, sliced thin
1 bell pepper, sliced, any color or combo
1 jalapeño, small dice, seeds removed or not
1-2 garlic cloves, minced
1 chicken breast, sliced thin
1/4t smoked paprika – regular paprika works in a pinch
1/4t chili powder
1/8t cumin
1 lime, juiced
Toppings (optional):
Cabbage, sliced thin
Lime wedges
Avocado, sliced thin
Cheese, shredded

INSTRUCTIONS
This comes together pretty quick so I recommend having all the ingredients ready to go before you start the stove.
Bring a large skillet to med-high heat, saute red onion and bell pepper in a little olive oil with a small pinch of salt. Allow to cook for about 2 minutes then add the jalapeño and garlic, cook another minute. Dump in the chicken, season with salt and pepper, stir and spread out on the pan. Once the chicken is about half way cooked, sprinkle with paprika, chili powder and cumin, stir to coat then continue to cook until meat is cooked through. Pour in lime juice, stir and serve, preferably still sizzling for effect!
Use whatever toppings sound good or you have on hand.
