Chewy and crunchy with just a touch of sweetness, not to mention the antioxidant punch from the goji berries! These are the perfect little healthy sweet treat!
INGREDIENTS
1c oats
1/2c shredded coconut
1/4c goji berries, dried (sub any dried fruit, just chop it up if its big)
1/2c almond butter
2T honey (sub maple syrup)
1/2c chocolate chips (I used white but get creative with what you have)
Pinch of sea salt – optional
INSTRUCTIONS
Optional: Toast coconut for 2-3 minutes in the toaster oven or oven at 350°F.
Line a loaf pan with parchment paper so it comes up the sides (so you can grab on it for easy removal). Put oats, toasted coconut, goji berries, nut butter and honey into a food processor. Pulse until combined and a little crumbly but clumps up when pressed together. Pour in the bottom of the pan and press down evenly throughout. Melt chocolate chips in a double boiler or the microwave. Flood the bars with chocolate then even it out with a spatula. Sprinkle with a little sea salt if you have it, then refrigerate for 1+ hours or freeze for 30 minutes. Cut into squares or sticks and store in the fridge.
