A super easy Sunday meal! Just dump a few things in the crockpot and enjoy your day. Spicy, smoky, slow cooked pork that just completely falls apart over black beans and rice. Topped with a pineapple-radish slaw that is the perfect way to balance out the heat, its totally optional but HIGHLY recommended!
INGREDIENTS
1 onion, 1/4″ slice
2 garlic cloves, smashed
3-5 chipotle peppers in adobo
2T adobo sauce from the can (more if you want it spicier)
2T tomato paste
1/2 pork tenderloin
1/2t salt
1/4t pepper
2c water
1/4c radishes, julienned
1/4c pineapple, julienned
1 1/2c black beans, cooked or 1 can drained – make your own here
2-3c brown rice, cooked
INSTRUCTIONS
Put onions, garlic, chipotle peppers, adobo sauce and tomato paste in the crockpot and stir. Salt and pepper the tenderloin, put it on top of the onions and roll it around so it gets some of the sauce on it. Pour in the water and cook on high for about 6-8 hours or low for 10-12 hours.
Toss together the radishes and pineapple, let sit for at least 10 minutes. Warm up the beans with a little water.
Serve pork over rice and beans and top with a little pineapple-radish slaw.
