COCONUT CINNAMON CASHEWS

Lightly sweetened, perfectly toasted and spiced cashews and coconut flakes that are so EASY to make and keep you coming back for more. An excellent topper for yogurt, oats or ice cream or just a quick handful to curb your sweet tooth!

INGREDIENTS

2T coconut oil
1/2t cinnamon
1/2t vanilla
2c cashews
2T maple syrup
1c coconut flakes
Sea salt

INSTRUCTIONS

Warm coconut oil in a skillet on medium heat. Add cinnamon, stir until fragrant.  Add vanilla and maple syrup, it’ll get bubbly.  Toss in the cashews and coat completely.  Continue to stir for another 2-3 minutes to toast the cashews, add coconut flakes for the last 30 seconds-1 minute. Pour onto parchment, salt and allow to cool.
