Do something with those leftover bananas that isn’t banana bread! These bananas turn into PURE sweetness, making the PERFECT topping to some delicious coconutty oats. I like to serve this with a big scoop of greek yogurt, a smaller scoop of almond butter and sprinkle with some toasted coconut and hemp seeds for some extra healthy protein, fat and fiber.
INGREDIENTS
1/2c milk of your choice
1/2c coconut water or just regular water
1/2c steel cut oats
Small pinch of clove or allspice
1/4t cinnamon
1/4t cinnamon
1 banana, small chop
1/2t coconut oil

Toppings: – optional
Toasted coconut
Greek yogurt
Almond butter
Hemp seeds
INSTRUCTIONS
Heat the milk and water until simmering, add oats and a small pinch of salt and cook on medium for about 10 minutes. In a separate pan (I like to use a nonstick), begin to cook your banana chunks in coconut oil on medium heat. After 5 minutes sprinkle cinnamon and allspice over bananas and flip then cook for another 3 minutes. Remove from heat, add banana, pineapple and walnuts. Cream together icing ingredients and top oats. I like to serve this with a big scoop of greek yogurt, a smaller scoop of almond butter and top with some toasted coconut and hemp seeds for some extra healthy protein, fat and fiber
