TOASTED SESAME NOODLES WITH VEGGIES

Who loves a 20 minute meal that is full of veggies? I love whipping up some yummy noodles with whatever veg I need to use up in the fridge, pour in some delicious toasted sesame oil with some tang and soy sauce and you have homemade takeout. SO. GOOD.

INGREDIENTS

1/2 8oz package of soba noodles (thin pasta would work in a pinch)

1/2 onion, sliced
1c broccoli, sliced long with a bit of stem
1/2c carrots, chopped
1 garlic clove, minced/grated
1/2 can water chestnuts, chopped
2T soy sauce
1/2t honey
1T rice wine vinegar
2T grapeseed oil + a little more (or some other high smoke oil)
4t toasted sesame oil split (not toasted is fine too)

Sesame seeds – optional

INSTRUCTIONS

Boil water and cook noodles to package instructions. Saute onion, broccoli and carrots in a little oil on med-high heat in a wok or large pan. Cook for 2 minutes stirring a lot. Add water chestnuts and garlic, stir then add soy sauce, honey and rice wine vinegar, grapeseed oil and toasted sesame oil. Turn heat off. Pour in noodles and toss to coat. Top with sesame seeds for a little extra love if you’ve got em!
