I never feel like there are enough nuts in something that is named a ‘Banana NUT Muffin’ #teamtexture so I loaded these muffins up with all the nuts I could find in my house and it was a total WIN!
INGREDIENTS
4 aging bananas
2 eggs
3T greek yogurt
3T milk
1t vanilla
1/4c brown sugar
1t cinnamon
1/4t nutmeg
dash of allspice
2T melted butter
2t baking powder
1t baking soda
1/2t salt
1c flour
1/2c whole wheat flour
1/2c walnuts, chopped
1/2c hazelnuts, chopped
1/2c sliced almonds
INSTRUCTIONS
Preheat oven to 425°F. Mash bananas with a potato masher or fork, I like to mash it really well while still leaving some chunks. Whisk in eggs, yogurt, milk, vanilla, brown sugar, cinnamon, nutmeg and allspice. Stir in butter. Add baking powder, baking soda and salt, stir well then add flour until just incorporated. Fold in the nuts and scoop into 36 mini muffins. Put in the oven then reduce the temperature to 375°F and bake for 15-18 minutes.
