LEMON THYME HALF A CHICKEN

Such a quick, easy and CHEAP way to meal prep some chicken for the week. When you buy your chicken already broken down with the skin removed, you’re paying a lot more for someone to do all that work. Brandon and I don’t eat a lot of meat so the half chicken is perfect for us. This method saves you a few bucks and tastes incredibly delicious.

INGREDIENTS

1 shallot, sliced 1/4 in
1 lemon, sliced 1/4 in
1 garlic clove, smashed
Salt, pepper, dried thyme, olive oil
1 halved chicken

INSTRUCTIONS

Preheat oven to 350°F and line your sheet pan with aluminum foil. Make a bed for the chicken with the shallot, lemon and garlic, drizzle with a little olive oil. Sprinkle salt, pepper and thyme all over the chicken and place it skin side up on top of the shallots and lemons. Drizzle the top with a little olive oil. Bake for 40-50 minutes and let rest for at least 20 minutes.
