BROCCOLI LENTIL BOWL WITH ZA’ATAR CARROTS + TAHINI SAUCE

Every week I ask my husband (just like my mom used to ask us growing up) “Any meal requests?” And this week he wanted a lentil bowl with broccoli and carrots. Sounded a little boring at first but with a little love, I came up with this gem. 

INGREDIENTS

2-3c cooked brown rice
1/3c dry green lentils, cooked in broth or water with a little salt and a smashed clove of garlic
2 heads of steamed broccoli (I just threw the streamer part on top of the rice when it had about 15 min left)

Carrots:
1 large carrot cut in big chunks
1t za’atar seasoning
1/4t Trader Joes Umami seasoning
Olive oil, salt and pepper.

Sauce:
1/2 zest and juice of large lemon
3-4T greek yogurt
1.5T tahini
1T olive oil
1/4-1/2c+ water (to desired consistency)
Salt and pepper

INSTRUCTIONS

Carrots: Toss and roast at 375 for 10 min/flip 5 min.

Sauce: Whisk together and drizzle on top.

Make it look pretty in a bowl.
