An excellent Sunday morning treat. Took me about 8 minutes to throw together and clean up. The recipe only makes 6 which is perfect for us because well, if there are 12 muffins in our house then we will eat 12 muffins. The recipe can very easily be doubled to make more for a crowd (and there was plenty of room in my food processor to do this too).
INGREDIENTS
1 egg
1 aging banana
3T melted butter (not too hot)
3T sugar
1/2t vanilla
3/4c flour
1/2t baking soda
1/8t salt
1/4t cinnamon
1/2c diced, fresh strawberries or frozen, thawed and strained
INSTRUCTIONS
Preheat oven to 425°F. Put egg, banana, butter, sugar and vanilla in the food processor and pulse until homogenous. Add flour, baking soda, salt and cinnamon. Pulse 1-2 times, not combined. Dump in your strawberries and pulse to your desired strawberry chunkiness. Scoop into muffin pan, makes 6. Put in the oven then reduce the temp to 375°F. Bake for 20 minutes. Let cool.
