French toast is amazing but can leave you hungry in just a few hours and typically has little to no redeeming value, not to mention a boatload of added sugar. In this version, I only add a little maple syrup to the yogurt and let the natural sweetness in the berries shine.
INGREDIENTS
4 pieces of sourdough, 1in slice
1/4c milk
3 eggs
Cinnamon, nutmeg, allspice dashes
1/2t vanilla
1T Frangelico (optional)
Pinch of salt
1c frozen berry mix
2T goji berries
1/4c water
1/2c Greek yogurt
2t maple syrup
1t hemp seeds
INSTRUCTIONS
Bring berries, gojis and water to a boil then simmer for 5 minutes then mash with a potato masher, continue to simmer until thick and saucy.
Whisk together eggs, milk, cinnamon, nutmeg, allspice, vanilla, Frangelico and a small pinch of salt. Let the bread soak in the egg mixture for a couple of minutes then flip and soak for another minute. Cook on medium in a skillet with butter until cooked through and golden brown, about 3-4 minutes on each side.
Stir yogurt and maple syrup together. Top with hemp seeds.
