GINGER MISO CHICKEN + BROCCOLI

A fast and easy weeknight meal bound to light up your taste buds. Stir-fried chicken and broccoli finished in a super flavorful ginger-miso sauce, served over rice. So delicious, nutritious and quick!

INGREDIENTS – serves 2

2T miso
2T ginger, grated
1T rice vinegar
1/2t soy sauce
2T oil
1t maple syrup
1/8t white pepper
3T water

2-3 T oil
1-2 chicken breast, 1″ pieces

1-2 broccoli heads, cut into small florets, stem peeled and chopped

Sesame seeds, to taste

INSTRUCTIONS

In a small bowl, whisk together miso, ginger, vinegar, soy sauce, oil, maple and water. Set aside.

Bring a large skillet to medium – med-high heat. Cook chicken in oil for 1-2 min on each side then remove to a bowl. Set aside then dump broccoli in the pan. Let the broccoli get some color on it, about 2-3 minutes, stirring occasionally. Add the chicken back along with any juices in the bowl, then pour the miso ginger mixture and stir to coat. Cover with a lid for 2 minutes. Give it one more good stir then serve over rice or noodles and sprinkle with sesame seeds.
