It’s time to change up your holiday dessert this year and I’ve got just what you need. Jammy pears infused with cinnamon, nutmeg and vanilla topped with a crunchy, brown sugar, rosemary, oat crisp. So flavorful and cozy, all you need is a little vanilla ice cream.
INGREDIENTS – makes 6-8
3-4 ripe pears, chopped or sliced (D’Anjou works best) ** see note
1/2t cinnamon
1/8t nutmeg
1/8t salt
1t vanilla extract
1c oats
1/2c pecans, toasted and chopped
1/2c brown sugar
1/4c flour
1/8t salt
1t fresh rosemary, chopped
1/2c butter, cubed and cold
INSTRUCTIONS
Preheat oven to 375°F.
Butter a baking dish or pie pan. In a large bowl, toss pears in cinnamon, nutmeg, 1/8t salt and vanilla until all the pieces are evenly coated. Dump into the baking dish and spread them out.
In the now empty bowl, stir together oats, pecans, brown sugar, flour, salt and rosemary. Using a fork, pastry cutter or clean hands, mash the butter into the mixture until all of the cubes are combined and it almost resembles a cookie dough. Crumble over the pears until they’re completely covered. Gently press down any pieces that are sticking up then bake for 40-50 minutes, until golden and crisp.

**the thinner/smaller the pieces, the more jammy and broken down the pears will get, if you prefer to reserve some crunch in the pears cut them larger
