SPICED APPLE COFFEE CAKE

The fall weather has arrived and this light and fluffy cake loaded with apples and topped with a delicious buttery walnut crumble is the best way to welcome the new season! Perfect for a sweet breakfast, brunch or just a little snack. So good!

INGREDIENTS

2 1/4c flour
1c brown sugar
1 1/2t cinnamon
1/4t nutmeg
1/8t clove
1/4t salt

2t baking powder
2 eggs
2/3c milk
1t vanilla

2 medium-large apples, cubed (I prefer a pink lady)

1/2c butter, 1/4c melted + 1/4c cubed

1/3c walnuts, toasted + finely chopped

INSTRUCTIONS

Preheat oven to 350°F.

In a large bowl, whisk together flour, brown sugar, cinnamon, nutmeg, cloves and salt. Scoop 1/2c of the mixture, dump it in a separate bowl and set aside. To the original bowl, whisk in baking powder then pour in eggs, milk and vanilla and stir until just combined. Fold in apples then pour in melted butter and stir it in. Pour into a 8×8, 9×9 or some equivalent baking dish that is throughly greased, set aside while you make the crumble.

In the second bowl, stir in the walnuts then cut in the cubed butter with a fork until incorporated. Crumble over the batter in the baking dish then bake for 50 minutes.
