A perfect citrusy treat for spring! Cute little mini muffins; fluffy and lemony inside with a buttery, just crisp exterior, finished with a light zesty glaze. Like a little lemon donut hole. So good!!
INGREDIENTS
1/4c butter, melted
1/2c sugar
1 egg
1 lemon, juice and half zest (save the rest of the zest for the glaze)
1/2c milk
1 1/2c flour
1 1/2t baking powder
1/4t salt
1/2t coriander
1/3c powdered sugar, sifted
1T milk
1/2 lemon, zest
INSTRUCTIONS
Preheat oven to 425°F.
In a large bowl, stir together butter, sugar, egg, lemon juice and half zest and 1/2c milk then sift in the flour, baking powder, salt and coriander. Spoon/scoop out 24 mini muffins in a well greased mini muffin tin. Place in the oven, reduce the temp to 375°F and bake for 20-22 minutes.
While they cool, stir together powdered sugar, 1T milk and the rest of the lemon zest. Dip the top of each muffin in the glaze then place upright to set.
